Coconut Oil Sugar Cookies - Desserts - Butter Cookie Coconut oil sugar cookies are made with half butter and half coconut oil in this unique shortbread recipe that yields moist, delicious sugar cookies with just a hint of coconut.
Now, this is the recipe I would die for, I saw these precious cookies at a TV show and just got up from my sofa to collect all the ingredients to bake them, and they were delicious... So, I’m going to share this absolutely yummy recipe with you guys. Trust me; you won’t mind gaining a few pounds after eating them.
So, let’s get started...
I. 1 cup butter softened VI. 1/4 cup German sweet chocolate, grated
II. 1/3 cup confectioners' sugar VII. 1/2 cup German sweet chocolate, grated
III. 2 teaspoons vanilla extract VIII. 1/2 cup confectioners' sugar
IV. 1 3/4 cups all-purpose flour IX. 1 pinch salt
V. 1 cup ground pecans X. 3/4 teaspoon ground cinnamon
Cream the butter in a bowl with 1/3 cup confectioner's sugar until light and fluffy. Add the extract of vanilla.
Then, in another bowl, mix the flour, ground pecans, ½ of ground dark chocolate, cinnamon and salt,
Then add this dry mixture to the to the creamed mixture gradually,
Wrap up the dough in a plastic wrap and leave it for a good 1 to 2 hours and let it become firm,
Now, preheat the oven to 325 degrees F (180 degrees C.)
Shape up the dough into 1 inch balls; place the balls 1 inch apart from another on a greased baking sheet. Then transfer it to the wire rack.
For the coating, sift 1/2 cup of the confectioner's sugar and 1/4 cup of the ground cocoa into a shallow bowl. Roll these amazeballs on the coating while they are still warm.
Now just sit back and enjoy these wonderful cookies with tea, or just munch on them whenever you want.

Char-grilled Chocolate Chip Cookies

Serves: 24
Ingredients:
1 bag Pamela’s Chocolate Chunk Cookie Mix
8 tbsp butter (1 stick) or butter alternative
1 egg (large) or egg replacer (prepared)
Directions:
Bring butter or alternative to soft room temp.
Combine with Pamela’s Mix and one large egg (or prepared egg replacer), and mix until completely incorporated. Dough will appear dark, oily, and slightly crumbly.
Press together heaping tbsp dollops and place on foiled wrapped cookie sheet.
Lightly flatten and bake in closed grill for 18 – 20 minutes.
Jell-O Cookies
Enjoy these light, flavorful cookies as a allergen-free alternative for baby showers, birthday parties, or a simple springtime treat. A twist on the classic sugar cookie, this simple dessert can be easily adapted using any Jell-O fruit favorite. (Pictured above: Strawberry and Berry Blue)
Ingredients:
1/4 cup non-dairy butter substitute, room temperature
1/2 cup vegetable shortening
1/2 cup sugar
1 3 oz package Jell-O (any flavor)
Egg Replacer for 2 large eggs (3 tsp. Egg Replacer + 1/4 c. warm water)
1 teaspoon vanilla
2 1/2 cups Gluten Free all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon xanthan gum
Directions:
1. Preheat the oven to 400 degrees.
2. In a large bowl, cream the butter, shortening, sugar and Jell-O.
3. In a separate bowl, prepare the Egg Replacer mixture. Dissolve completely. Add the vanilla. Pour into the sugar mixture. Beat well.
4. Sift together the flour, salt, baking powder, and xanthan gum. Add slowly to the sugar mixture while beating. Mix just until the ingredients are thoroughly combined.
5. With a small spoon or cookie scoop, scoop out the dough and roll into a 1" ball. Place the ball onto a nonstick cookie pan, leaving about 2" between cookies. Once all the cookies are on the pan, take a small bowl and gently press the cookies down into a circle. Sprinkle the top with granulated sugar.
6. Bake for 6-8 minutes. Let cool. Serve.
Yield: approximately 30 cookies

El año pasado hice galletas de chocolate con sal, galletas de mantequilla y te macha y muffins de cacao con pepitas de chocolate. El año anterior fue un surtido de galletas de diferentes tipos, des de pockys a galletas con glaseado de azúcar pistachos y rosas, pasando por galletas de chocolate y jengibre. Este año, en cambio, para el día de navidad he hecho un delicioso bizcocho de cacao y un bundt cake de te matcha, así que ahora mismo estoy más o menos como el gato regordete de la ilustración, disfrutando, con los mofletes como un hámster, llenos de lo que ha sobrado de pastel. Espero que todos podáis descansar un poco este fin de semana antes de fin de año!❄️❄️
EN|| Since I don't like most sweets, the last few years I've been getting into making my own cookies and pastries for Christmas. Last year I made chocolate cookies with a dash of salt, butter matcha cookies and chocolate chip muffins. The year before that it was an assortment of different types of cookies, from pockys to sugar glazed cookies with pistachio and rose petals, and even chocolate and ginger cookies. This year, however, for Christmas Day I've made a delicious cocoa cake and a matcha tea bundt cake. So right now, I'm more or less like the chubby cat in the illustration, enjoying myself, with my cheeks like a hamster, full of leftover cake. I hope you all can get some rest this weekend before the end of this year! ❄️❄️
